Diabetic-friendly Devil's Food Cupcakes with Splenda Buttercream

It's almost here guys! Halloween! Candy! Costumes! Parties! Exclamation marks! Seriously, forget Christmas, THIS is my favourite holiday. 

These spiderweb cupcakes (which are almost sugar free, believe it or not,) were actually much easier to create than I thought they would be, thanks to Wilton Candy Melts. Is there *ANYTHING* that stuff can't do?

Tutorial forthcoming after I've had a loooong weekend of debauchery and am able to peel myself up off the floor, chocolate bar wrappers all stuck to my face.

Hey everyone! This entry is my under-the-wire, last-minute entry into Redpath Sugar's "The Happy Baker" baking challenge. I've only got a little while left to get this entry in, so I'll be brief. No rambling in this post, I promise.

After a couple *cough*FOUR*cough* batches, I think I've perfected the Strawberry cupcake. At least what I think is the perfect strawberry cupcake. It's sweet, it's puffy, and it's a little spicy. Like me! Especially the puffy part.

Capital Cupcake Camp 2010

On Sunday September 26th, I walked into Ottawa city hall into a room filled with hundreds of cupcakes. Hundreds of cupcakes made by Ottawa's finest professional and amateur bakers. Hundreds of cupcakes just waiting to be eaten. 

Excited yet? I know I was. 

There's nothing in the world like being in a room filled with so many passionate people. Everyone in attendance was filled with so much positive energy. Excitement, hope, pride. It was so thick in the air you could, well, spread it on a cupcake.
